NUTR 3260 - Science of Food (4) Credit Hours
Basic scientific concepts related to the selection, care, and preparation of foods; emphasis on chemical and physical properties and their interaction with food preparation and environmental variables. Lecture 3 hours, lab 2 hours. Prerequisites: NUTR 1450, CHEM 1110, CHEM 1110L, CHEM 1120, and CHEM 1120L or department head approval. Corequisites: NUTR 3260L or department head approval. Dietetics majors only. Laboratory/studio course fee will be assessed.
